yeah i've heard shrimp will try and nip at fish that arent fast enough but there's enough room for my fish to stay away from them.
and yes they are much more vulnerable when they molt. the shrimp never liked the hiding place i made for them. they always tried to hide in my fish's house. so i guess that didnt make him very happy :P
