This is my everyday Cornbread recipe... I make this about twice a week and eat it for breakfast or as a snack. I went on vacation to my sister's house and the first thing my brother in law told me was that he wanted me to make some corn bread. It took me time to get the recipe where I wanted it.
This produces a slightly sweet, moist and fluffy cornbread.

1 cup milk
1 cup all purpose flour
1 1/4 cup corn meal
1/4 cup melted butter
1 tbsp baking powder
1/2 tsp salt
1/2 cup sugar
2-3 tbsp honey
1 egg

Preheat over at 390 degrees F
Beat egg and sugar in a large bowl for about 30 seconds. Beat in honey, milk and melted butter.

In a separate bowl mix the flour, corn meal, salt and baking power until throughly combined.

Slowly add the dry mix to the liquid mix. I use a hand beater for this until the batter is throughly moist.

Grease a 9.5" glass pie mold with lots of butter. Pour the batter into the mold and bake 25-30 minutes until the bottom looks nice and golden brown.

Now try not to eat the whole thing before it gets cools down.

Fresh Sweet Corn Recipes

Lemon Pepper Corn
Take 12 ears of corn right from the field. Shuck, silk, and wash it. Layer ears into a foil lined baking dish. Put just enough water in the bottom to steam. Put a pat of butter on top of each and generously sprinkle with Lemon Pepper Seasoning. Cover and seal with foil. Cook for about 15 min. Serve hot.

Microwave Corn
Take 1 ear of fresh corn. Fold down shuck and remove silks. Wrap with bacon. Replace shuck and tie with cloth string. Microwave for 4 min. on High until bacon is crisp. Enjoy

Be creative with each of these try adding your favorite season blend for variety!

Awesome Pancakes, made up by me (this makes about enough for two people - like 8 small pancakes)

1/2 c. flour (I use brown rice flour)
1/2 c. plain yogurt (or French vanilla... exclude marked ingredients if using French vanilla)
1 tbsp. sugar (exclude if using vanilla yogurt)
pinch of salt
1/2 tsp baking powder
1 egg
1 tbsp. oil (I use coconut oil)
1 tsp. vanilla extract (exclude if using vanilla yogurt)
1 tbsp. maple syrup

Mix the dry stuff together in one bowl. Mix the wet stuff together in another bowl. Add the dry stuff to the wet stuff and mix it all together. Eat some batter. It's tasty. ;) Cook like you normally cook pancakes... get the skillet/griddle hot, put oil or butter in it (I use coconut oil), wait for oil to get hot. I use a 1/8 cup measuring cup to pour the batter in the skillet. Flip when bubbles are all through the pancake/when it's easy to flip.

I use this from the weight watchers website

I'm eating clean but that still doesn't mean I want some nice cookies with my coffee or tea in the afternoon

So I found this and the only thing I would edit is

Add the zest and juice of an entire lemon (since lemons/fruits are 0 points it doesn't change the point value)

Here you go, Screen shot

They taste like little scones!

1 serving size is 2 cookies which comes out to only 3 points!
Normally cookies run me 6 points for 2 tiny cookies.

So I hope you guys like it!

I wanted to share this after stumbling across it last night in search of a lost recipe.

It's an E-book compiled of old simple Pennsylvania Dutch recipes. The Gutenburg (probably spelled that wrong) project behind it put the book out so the knowledge wouldn't be lost I think. (I didn't read the whole thing on the project behind it yet.)
