Thank you! I really love those cories! :) I wish the fourth one would have joined them, but he was off digging for food somewhere.

I made the vegan lemon bars tonight, they turned out really well! Very gooey and tart! Here is the recipe:


1 cup all-purpose flour
5 tablespoons margarine (I used Earth Balance)
1/4 cup vegan granulated sugar

3 egg equivalents, prepared (I used Ener-G Egg Replacer)
3/4 cup vegan granulated sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/8 teaspoon salt
2-3 lemons, zested and juiced
powdered sugar, optional


1. Preheat oven to 350 degrees F. For crust, in a bowl, combine crust ingredients and press into 8 X 8" pan. Bake for 15 minutes.

2. For filling, while crust is baking, beat the egg substitute (follow directions of your brand) in a bowl until foamy. Add the remainder of the filling ingredients and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool.

3. For topping, sift powdered sugar on top, if you'd like.

Fancier version: Add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

Gooey AND tart?!?!?! :D I must bake these delicious treats! :D Thank you so much for the recipe! <3

LOL I totally had most of that cookie dough spaced out over three meals! XD I had a bunch of food left but it was all packed up so I couldn't eat it! :'D All I had was the cookie dough and a few ingredients/condiments in the fridge! XD

I made a coconut cave for my one fish so I had a bunch of fresh coconut. I made vegan coconut cookies...They were pretty good but I used a non-vegan recipe so I had to make a few substitutes.. I am still trying to perfect it.. I want them crunchy dang it! Maybe I will post it up when I get it right.
