Betta do have a very small bioload. I have two in 10 gal divided tanks, and the nitrate hardly gets above 5ppm. But that is with live plants.
I wouldn't do less water changes as one water change per week is normal with fish tanks. You could get something like an apple snail to increase the bioload. Or feed smaller amounts 3-4 times a day (if your schedule allows).
Sorry it took me so long to get back. Work has been really hectic lately. They can't seem to decide when they want me to work :/
