I developed my own cajun haddock. It works for any white fish (flounder, haddock, cod, tilapia).
Basically I just add cumin, ground red pepper, cajun seasoning, and chili powder in that order. Just add enough to your taste- I like mine spicier, so I add more of all seasonings.
Then bake at 425 for 10-15 minutes. It depends on the size of the fillet. With it, I just steam up some beans as well. My mom likes to add rice on the side.
The same seasonings can also be applied to chicken breast. Just bake it longer (30-40 minutes at 425) and check to see its not pink in the middle.
They're both delicious recipes and add a little zing.
