So I conditioned my pairs for at least 3 weeks now and I was wondering how long the courting will last for or when to take the female out if it doesn't happen

Leave them be if female doesn't look too badly hurt. If female still returns to the male after hiding. But take her out if she is not responding, specially not responding to beatings. Usually if she has lost interest her color will show stress signs - definitely take her out.

Take her out if the male has lost interest, no longer working on his nest, no longer seeks the female from time to time.

The courtship may take a few days to a week. Cramped plants and hide out help the female stay safe from over aggressive males.

Courtship varies in each pair,the female may have lots of eggs or the male have trouble wraping the female.
Take the female out when she swims away from the male and nest and hides.
I will take the female out only when she is beaten badly or when the pair looks stressed or tired.

Or, if they lack interest in each other (mine did). Which the signs would be: The nest falls apart, the male no longer chases, the female no longer cares to follow, etc.

What would I do if I think my female lost interest?
Condition them again?

You can try a few things... If you have a breeder's net and another female introduce the female into the netted box, and see if the female realizes she has competition (sometimes works).

I showed the mirror to my last pair and the female, being more stubborn and manly, took to it well.

Otherwise yes reconditioning would be the best. :)
