Why does she still have such prominent stripes at about 2 months old?

If being from a pet store, it is pretty common. Two of my plakats still have their stress stripes at a year old, I'm trying to find the best solution to have them relax enough to remove the stripes.

A year? Wow! I didn't know that could happen! Does this mostly happen with females?

My daughter got these 2 small females yesterday and they looked totally different in the tank in the LFS. Neither of them had stripes. This morning they both had very prominent stripes. The larger one was completely purple when we brought her home.

To me it seems to happen with the ones that were not bred very well. Like my dark red female CT who has awfully messy fins, she still has stripes. These plakats are sisters and have stripes. Though another plakat I have does not have stripes at all, and neither do 100% of the young I bred until they as actually stressed (bagging for example)

Egg spots mean nothing for babies.. both sexes easily have them - part of a defense against adult males.. so looks to be a male with those ventrals - usually a female has a more stubby, short ventral rather than long and thinner.

I sure hope it's a male! I'm looking forward to those fins growing out.

Girl I believe. It's in the facial structure (how I determine gender is by the facial structure rather than other methods).
