So, if I'm understanding you right, when you tested after a week you didn't see the .25 ammonia that you said always happens after a week?

If not, I'd say you are 100% cycled, and either your few plants are keeping the nitrates down, or keeping them lower than the test can measure. Either way, that sounds like a win to me! I never see any nitrates in my heavily planted tanks, and even though you are not heavily planted you are not at all heavily stocked either!
