I am assuming your soil is capped with something? Some times, large grained caps let a lot of ammonia leech into the water.

Just wanted to check that issue off the list.

I used a one inch layer of miracle grow organic choice sifted and roughly an 1/2 inch cap of aquarium sand. I have had lots of plants in the tank since setting it up. Here is a list of what I have:
2 anchored anubias
1 small wisteria
2 micro chain sword
2 java fern
1 very large sword not sure which one
4 small amazon swords
Just added 2 marimo balls today

Thanks for the help everyone, but it looks like the cycling is back on track. I did a 5 gallon water change yesterday and took readings today. I am at 1ppm Ammonia, 5ppm Nitrite, and 10ppm Nitrate.
