5 Gallon with no filter...

How often should I do water changes? I am planning on getting a filter soon and Yes, I know how to cycle a tank so don't worry about that lol! Also how much of the water should I change? How often should I do a full water change?

Thanks.

I would do 30% every week. I never do a complete water removal so as not to upset the bio colony or change the PH in the tank to much.

If you're using water from the same source your PH shouldn't change much. Also, your baceteria colonies attach themselves to solid objects like your filter media and substrate. I would change as much water as it takes to keep your NO3 under control, for some aquariums 30% won't be enough.

IMO-On a 5g unfiltered tank with one adult Betta, I would make twice weekly water changes-1-50% and 1-100% and once you get the filter and the tank cycled- twice weekly 50% to maintain water quality to prevent health and fin issue- unless you had it heavy planted and then weekly 50%.

I agree with the 100% changes, the tank can either be cycled or uncycled, one or the other. Keeping it in a constant stage of cycling and dying off isn't good for your betta. Until you decide to cycle it, you must do 100% changes, scrubbing out everything in the aquarium with hot water, in order to get rid of all of the ammonia.
