Why test the nitrate if you need to wait for the nitrite to go down anyway?
You want your ammonia under 0.02ppm, I think. I lost my little chart. I just know I want the test to be yellow
After the ammonia goes down, you test for nitrites and if they are betweem 5-10 you're ok. If not, you make a water change. When they go up, you make a water change. Track ammonia and nitrate and make water changes accordingly.
