Corn Bread!

Ingredients

  • 1 1/2 cups cornmeal
  • 2 1/2 cups milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2/3 cup white sugar
  • 2 eggs
  • 1/2 cup vegetable oil


Directions

  1. Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.
  3. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.

Ginger Chicken!


Ingredients

  • 2 tbsp vegetable oil 2 2tbsp tbsp(25 mL) (25 mL) vegetable oil
    2 tbsp slivered gingerroot 2 2tbsp tbsp(25 mL) (25 mL) slivered gingerroot
    1 clove garlic , minced1 1clove garliccloves of garlic, minced
    2 boneless skinless chicken breasts , cubed2 2boneless skinless chicken breastboneless skinless chicken breasts, cubed
    2 onions , chopped2 2oniononions, chopped
    1 sweet red pepper , diced1 1sweet red peppersweet red peppers or greenpepper, diced
    1 cup sliced mushrooms 1 1cup cup(250 mL) (250 mL) sliced mushroommushrooms
    1 tbsp soy sauce 1 1tbsp tbsp(15 mL) (15 mL) soy sauce
    1 tbsp oyster sauce 1 1tbsp tbsp(15 mL) (15 mL) oyster sauce
    2 tbsp chopped fresh coriander 2 2tbsp tbsp(25 mL) (25 mL) chopped fresh coriander or mint or greenonions

Preparation:

In skillet or wok, heat oil over high heat; stir-fry ginger and garlic for 30 seconds or until fragrant. Add chicken; stir-fry for 2 to 4 minutes or until lightly browned. Add onions, sweet pepper and mushrooms to skillet; stir fry for 1 to 3 minutes or until softened. Stir in soy and oyster sauces, tossing to coat. Sprinkle with coriander.

Does anyone like meat?
(This is all proportional to the amount of meat you fix. I usually use this for two good size steaks)
Schnyder Marinara:
1. 1/2 cup of olive oil
2. 1/3 cup of Teriyaki sauce. Make sure it's the sauce and not the glaze. You cannot use the glaze.
3. Small sprinkle of pepper
4. Two sprinkles of garlic powder.

Stir all this up and let the meat (works A-W-E-S-O-M-E on steak and beef/porkchops. :D ) soak in this for about an hour. Then grill it. I don't recommend it for chicken though. Just doens't taste good.
