It's completely normal for a new Betta not to eat. Wait for him to claim it as his territory, then usually he'll accept food. Just try it a few times a day every day until he eats.
Also, I would try getting a higher quality brand of pellets such as Omega One or NLS.
I've used the Aqueon brand for four months and it has been fine.
But at the same time I just bought Omega One pellets for no reason. It wouldn't hurt to switch over if you are able to. My fish didn't even notice the change in food tonight.
