Personally, I feel 2 would be too many snails, mystery snails have huge bioloads, and they multiply like you wouldn't believe!
ghost shrimps are agressive, if you have that many, make sure you have enough hiding spots for them, and that you sink something for them to eat, or they might start preying on each other or your fish.
That is a bit much for a 5 gallon tank. I would just put a Betta and the 3 shrimp or 1 snail, not both.
