There are some pretty good plants out there that don't require a whole lot of light, and are generally easy to take care of. Java ferns and java moss are very popular...I've always been happy with elodea/anacharis (duckweed)...anubias and water sprite are also pretty easy and attractive.
Watersprite is also a great addition. Look it up, its a beginner plant and will provide roots for your betta to build a bubblenest in!
