Yes fish can get sunburned. A very specific case brought this to light. There was a massive koi pond in Japan that had almost no shade. All of the fish were white or lighter colors. Because they had no shade, they all got "sunburned" (which is basically radiation damage of the skin--it's under the scales). As a result of this, many of the koi developed skin cancer and succumbed to it.
For all the colors that look unnatural I'd say it has to be the the whites. It's a color seen so rarely in fish because it stands out so well in the murky waters. Reds actually blend in rather well when the water has a high amount of tannins.
