I plan to buy a kit tonight, because I have to buy a new filter cartridge anyway. The one in the tank is about 80% covered with brown stuff that I have no idea what it is other than possibly left over algae from the snail's food.

Right now I am expecting that my Betta is asleep, but I think the snail will probably be seeking algae around the tank that I may have missed. I am not sure how to feed the snail, since I believe that it is his food that is causing the ammonia (or whatever that caused the caustic smell). Do you have any suggestions (and please don't say buy a separate tank for the snail )?

Keep up on vacuuming up leftover food and waste an twice weekly water changes

It's probably brown algae. It's a normal thing in unestablished tanks. I had it in mine for a while.

I keep my snails in a separate bowl and when I prune my elodea in the main tank I feed it to them.. I have no idea if that's good but they've been with me 4 months now and it seems to be working..
