Just let it sit and wait out the nitrites? That means I don't have to go and put the shrimp back in, yes?

I'd keep doing what you were doing until it is complete. I honestly always use the fish-in "stuff it with live plants" method, but you're going to still need something in the water to emulate that.

Alright, so keep the shrimp until the nitrItes pass through. Thanks again for your help!

There are also 3 plants in there, 2 anubis and one java fern.
