I'd say in a 1-2 gallon change the water every other day if a 1 gallon and maybe every 2 days if a 2 gallon. Really the best thing that you can get is an ammonia test kit (liquid not strips which are inaccurate) and test the water right before your water change to make sure that there is no ammonia- this way you know if you are changing it enough.

I talk to my bettas a lot. I also let them play catch the finger. Feeding them a varied diet will keep them amused at feeding time, and I also often let them flare at a mirror.
