2.5 gallons is a great size. The temp should be a bit higher though, around 78-80 degrees F.
You just got him yesterday correct? He could just be adjusting to you and his new home. I think a couple of my Betta were skittish at first, then they realized I feed them. :) After that, they would come right up to the top when I open the tank begging for food.

Since you just got him, he may be like that for a few days. He just needs to get used to his new home, don't worry!

like the others have said, when i moved chloe to a bigger tank she was freaked out everytime i opened the lid to put food in there, but once she realized that i wasnt going to attack her and actually feeding her, she warmed up to the lid opening, and now i have to be careful because she will jump if im not careful

Each one has their own personality. Some are friendly right away and others take awhile to warm up to their owners.

I agree with what everyone else has said.

I just wanted to add that 72 F is really much to cold. You are going to need a heater to get that temp up to around 78-80.
