Yeah, even if you were able to get them to hatch, your betta will probably just eat the fry.
Don't worry, I'm pretty sure it's happened to everyone with ghost shrimp. Two of mine had eggs when I got them, and now they're eggless. It's not going to hurt them, and you shouldn't have your tank overrun by them, either.
