Ok, It's probably nothing... but i'm nervous.
He's just A LOT less active, and he has floating poo. Is this normal?

How often do you feed your betta fish? once a day, at dinner 4 pellets
How often do you perform a water change? Half week: 75% Half week: 100% What type of additives do you add to the water when you perform a water change? We have filtered water, and I have tested it for all toxins and nutrients. From my testing kits, it's ideal parameters.

Well for now I would make sure his water is crystal clean, and warm, maybe up the temp a couple degrees to 80-82. And add some aquarium salt/epsom salt to the tank (1tsp/gallon) to help boost his immune system and help fight off any infections that might be brewing?
