Here's one for folks that enjoy Greek food.
Ever wondered how they make Lemon Potatoes? Here's a recipie that tastes just like it was made in a resteraunt!
Lemon Potatoes
3lbs of Yukon Gold potatoes
1/2 cup Lemon Juice
1/3 Cup Olive Oil
2 cloves of Garlic, minced (or crushed. I do mine crushed)
1 Teaspoon of Oregano
1/2 Teaspoon of Sea or Kosher salt (I do just a pinch of Kosher salt for me, as I do low sodium)
1/4 teaspoon of pepper (freshly ground is best, and really, do it to taste)
1 can of chicken broth (You can substitute vegitable broth if you want a Vegitarian friendly version)
1. Peel potatoes and cut them in half or quarters. You want the slices to basically be all the same size.
2. Combine all ingredients in a ziplock bag and shake to mix.
3. Put the potatoes in the ziplock bag and give it another shake to coat everything. Let it sit for a minimum of 2 hours. Overnight is best.
4. Pre-heat oven at 400 degrees.
5. Put the potatoes in a pan and roast them for 1h 10mins.
6. Enjoy!

AWESOME! I HAVE to do this, too! I loooooooove baking seasoned sliced potatoes in the oven.
Oh! Another good one is Baked Apples. They're great as a dessert with a bit of vanilla ice cream on the side, but they're also plenty delicious on their own.
Baked Apple
4 good quality Golden Delicious Apples (Or any other baking apples: Red Delicious works, as do Rome Beauty)
1/4 cup brown sugar
1/2 teaspoon of Cinnamon, Clove and Nutmeg
1 Tablespoon of Butter
1. Preheat the oven to 375. Cut off the top of the apple and core out the apple. Leave about a half an inch at the bottom of the apple, and just remove the core. You can use an Appler Corer for this, or use an ice cream scoop.
2. Combine the brown sugar and spices in a bowl and mix. You can add pecans and raisins too.
3. Pack the combined mixture into the hollowed out apples, and put the butter on top. If you saved the tops of the apples, put them on top of the butter as well.
4. Place the apples into a baking pan (I like to use corningware for this) and add a little bit of water at the bottom of the pan. This prevents the apples from sticking to the bottom when they're cooking.
5. Put them in the oven and bake them for 30-40mins. They should be tender, not muchy.

Pineapple Chicken Salad Pitas Ingredients
2 1/2 cups chopped cooked chicken breast (about 1 pound)
1/2 cup matchstick-cut carrots
1/3 cup sliced almonds, toasted
1/3 cup light mayonnaise
1/4 cup finely chopped green onions
1/4 cup plain fat-free yogurt
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (8-ounce) can crushed pineapple in juice, drained
4 (6-inch) whole wheat pitas, each cut in half
8 Romaine lettuce leaves
Combine first 11 ingredients in a large bowl, stirring well. Line each pita half with 1 lettuce leaf; fill each half with 1/3 cup chicken mixture.
This was terrific. I only eat half a pita. The recipe says a whole pita per serving.

Curried Chicken Rice Salad
YIELD: 6 servings (serving size: 1 cup)
PREP TIME:8 MINUTES
CHILL:8 MINUTES
Ingredients
1 (10-ounce) package frozen microwaveable brown rice (such as Birds Eye)
1 cup vanilla fat-free yogurt
1 teaspoon curry powder
1/4 teaspoon salt
3 cups chopped cooked chicken breast (about 1 pound)
1 1/2 cups chopped Gala apple (about 1 medium)
1/2 cup chopped celery
1/4 cup cherry-flavored sweetened dried cranberries (such as Craisins)
Green leaf lettuce leaves (optional)

2. While rice chills, combine yogurt, curry powder, and salt in a large bowl. Add chicken and next 3 ingredients to yogurt mixture, stirring until coated.

Yummy!! My mom my makes these, but she puts raisins in the too. It makes them even better!
I know one!
It's a cake made from low sugar angel food cake, coconut, fruits, icecream and cool whip.
You get the cake and cut out the middle.
Cut the whole cake in half and add mixed fruit in it and ice cream (vanilla - soy or non-soy).
Then place the cake back together and sprinkle the coconut over the top after adding the coolwhip over it. Place in the freezer to cool and/or till ready to eat!
1 small box of Jello, pretty much any flavor you like but we usually use orange.
1 small container of cool whip
1 container of cottage cheese
1 small can of Mandarin oranges
1 20 oz can of either pineapple chunks or tidbits.
Mix the cottage cheese and Jello (right out of the box) up in a large bowl. Add fruit and cool whip and stir up.
We use sugar free jello in ours. When we lived in Colorado we had tiny wild mountain strawberries in our yard and we used strawberry jello and put the little strawberries in our jello salad.
