Try New Life Spectrum and/or Omega One - both excellent choices, IMO. :)

You could try some tropical flakes (one with meat based ingrediants.. I have some that my betta actually likes.. let me check what they are called *runs into bedroom* ..... Hagen Nutrafin Max Tropical Flakes...
I also feed the hikari pellets and as a treat, maybe 3 times a week, freeze dried bloodworms. He will probably for sure eat the bloodworms if you got them, but they aren't good to feed as a main meal staple, and would probably make him even pickier...

Do you soak your hikari pellets before feeding? If not try that, Sumo used to spit his out but it was because they were too hard, if you soak them for a minute or so before though it really softens them up... he never doesn't eat them now.

I recently bought some Omega 1 pellets, they're fantastic.

Make sure that the first two ingredients are fish/sea-food based. That is why I do NOT recommend the Hikari Bio-Gold.

I recommend New Life Spectrum Betta food.

I use Hikari for my picky imports....they love it. I feed a lot of frozen food too. I'm yet to try NLS, or Atison.

Could it be that the pellets are too large for him? Try the Micropellets - Hagen makes them.

Mine seems to like the NFS ones best. I notice they smell fishier then the rest.

He also likes M&M's.
