Question Does this sound like a good 10 gallon freshwater tank?

2 honey gourami, 2 dwarf gourami, 3 pygmy cories? Oh and 1 or two apple snails?

I don't know about Gourami's but I tried Tropical Fish and Aquariums Compatibility Match

and it said that dwarfs & Honey's aren't compatible (and they should be kept in groups of 3+ anyway).

Pygmy cories (I have some) should be kept in groups of 5+ .

gourami are related bettas and can be aggressive, especially if you get two males.
