Whater change after cylce?

My first 10 gallon fish tank is just about finished my fishless shrimp method cycle and I have a few questions.

I have two bettas and I plan on splitting the tank in half and giving them each their own side.

Now right now my ammonia and nitrites read 0 and my nitrates are a little too high but I assume that will go down soon. Should I do a water change now? And if so how much water? I was a a little hesitant because I wasn't sure if it would mess up the ammonia and nitrite levels. Also right now I only have gravel and a fake plant in there. Is it safe to remove the fake plant and add in some real ones?

Thanks! :]

Congrats on getting through the cycle! Go ahead and do a water change, it's the only way to bring down the nitrates. I'd do at least 75%, then test nitrates again, you may need to do another smaller water change if they're still too high. I don't know much about live plants, but I don't see why you couldn't add them. :)
