My betta would get his tail grown out until he could reach it, and then bite the whole thing off again. Used to drive me nuts!

he belongs to pdxBetta, but I'm hoping to get one of his spawn someday, lol. it happened during shipping though, so you can't really blame him. figure it's like chewing off your fingernails when you're nervous

Precisely. Long finned male betta's aren't the most graceful of swimmers, especially when they are making a U turn. My male did this, dropped a pellet, he swam past it but caught it on the corner of his eye. As he did a U turn his tail was still by his head as he lunged for the pellet, took a little chunk out of his tail in the process.
