HELP: Betta won't eat

I've had my betta for close to 1 year now. For the past 1.5 weeks, she has been increasing getting scared of me, hiding away. Now for the past 4 days, she hasn't eaten anything at all.
Obviously I thought she might be sick, but other than looking skinny, she's fine.
She doesn't behave like this before, and it's not like i moved her to a new tank or onto a new diet or anything.
Anybody has encountered something similar before?

Water Parameters:
Have you tested your water? If so, what are the following parameters? No, but I have had my betta for close to a year, and before then, it had been ok. I think if the water had not been ok, my betta would have gotten sick way before then. Also, my betta is not sick. She is just really really stressed out...altho i don't know why. She used to be very unafraid of me, like excited to see me.

Symptoms and Treatment

How has your betta fish's behavior changed? Yes, got very scared of me
When did you start noticing the symptoms? ~2 weeks ago
Have you started treating your fish? If so, how? I added a bit more aquarium salt, and also tried to minimize light + movement around the tank (i.e. give her isolation)
Does your fish have any history of being ill? No.
How old is your fish (approximately)? I think 1 year

hmm, well in a 2 gallon, you'll want to do two 50% and one 100% a week. On top of that, you might want to stop adding aquarium salt and betta conditioner. Dechlorinator is all that is necessary. The aquarium salt used for extended periods of time can actually hurt a betta's internal organs.

I would try soaking your pellets in garlic juice, sometimes that helps spike a betta's appetite. Also, apart from not eating, is she acting sick in any way or hiding?

Yes, she is constantly hiding ,which is weird because my fish is not new. She has been with me for close to a year, and before this symptom happens, she has always been very excited whenever I'm around.
But I will take your advice on the conditioner. Come to think about it, I did change to a new betta conditioner about 3 weeks ago, perhaps she doesn't like it... altho I also used the same conditioner on another betta, and that betta is fine...
