I'd like to get a whole new fixture..maybe a double or triple so I can mix an match bulbs. I love those tanks where the fixture is suspended above the tank and plants are growing out of the top.

Same, those are awesome.
But every fish I keep (bettas, hatchet fish, soon to be ropes/bichir) seem to have a knack for escaping fish tanks.

That would be no fun!
Years ago I had a pair of oscars that would escape their tank....ended up having to put brick on the top to keep them from jumping out. Even still..they got out one day while I was at work and died on the floor.

Oh gosh.
If I ever get a chance to set up a brackish tank, I'll do fiddler crabs. Love this:

You can buy little mangrove trees for the top of your tank, they are fine in fresh/brackish/salt. The trees in the above photo are also mangroves:

I want hatchets..but I have a gap in the back of my tank that I can't easily close. I may go with harlequin rasboras.

Was so paranoid about my marbles. I've heard stories that they love flying away while you're doing tank maintenance. Mine go chill at the bottom of the tank though, never seen anyone take off.
But, that one day, when the dogs knock the shelf or something startles them for real, they'd be gone without a lid.

What kind of substrate do you have? when I disturb the sand in my tanks the filters cut out....I've since learned to unplug them during maintenance.

I love glass cats. Too fragile or too big for my set ups though.
They're one of my favourite fish.
I only like paraiba angelfish.
