The wheel that I had for Tegan was the Silent Spinner and it was super nice and quiet.

They double the space they have and it adds a vertical aspect as well. My local pet store has them, but they have different styles around and what not. I don't know if petsmart or petco has them but it might be something to consider if you ever expand, or want to have some spoiled mice.

Aspen bedding is good. I liked mine when I had it. And are you thinking of paper bedding or just paper? Paper bedding (ie: carefresh) is quite expensive.
And I always gave Tegan 2 kleenex whenever I would change her bedding and she'd take it in and burrow in her house with it. TP would work too and they probably would have fun shredding it.
