Rice is relatively easy to eat, maybe try flavoured rice for extra...flavor LOL. I don't know if you'd be able to eat that though... maybe try small scoops?
If rice is ok, you could try adding some chicken broth, or beef broth for a more meaty taste, and I think that would add protein to it as well...
Runny eggs may be easy to eat as well.
Mashed potatoes that are mashed very well should be good, you don't really need to chew it either, just swallow.
