Soak the pellets in garlic. This will sometimes do the trick. I had one fish that also really likes moving food. I would drop in the pellets and blow on the water so they would move. It worked for him, so its worth a try. Bettas can go about two weeks with out food, so no need to worry now.

If he's new, he might need some time to settle in. New bettas can take up to 2 weeks to start eating.

How big is your tank?
What's your set-up like?
What's the temp.?

I drop my food in one at a time.. sometimes they just don't see it, other times they stalk it like a wild animal and it's pray. I will put just the tip of my finger next to it which usually grabs their attention and they rush for it.

Temps. of 76-78 are ideal. The 80 range is usually used for spawning/conditioning purposes. As long as you can get the temp over 75, you should be fine. :)
72 isn't freezing, lol.
