I'm writing a few days after I noticed the apparent injury, however, it doesn't seem to be getting better so I'm reaching out to yall. I went on vacation for about a week and during that time I had a friend feeding my fish including Celeste. I noticed his bottom fins seem to have disappeared almost entirely and that there was that chunk out of the lower half of his body. I figured it was fin rot and no big deal so I treated with erythromycin x4 days. I followed the instructions on the box to a T, did the 1/4 water changes, and took any carbon-based cartridges out of my filter. He is still eating well, and for the most part, he is fairly active, but I'm worried that is apt to change. There really isn't a ton in his tank I feel he could have gotten himself snagged on. Any thoughts or guidance is much appreciated! Parameters and pictures below:
Housing
What size is your tank? 10 gallons
What temperature is your tank? 80F
Does your tank have a filter? yes
Does your tank have an air stone or other type of aeration? no, having seen my nitrite levels I did plug it back in, however.
Is your tank heated? yes
What tank mates does your betta fish live with? bladder snails (unfortunately)

Food
What type of food do you feed your betta fish? Aqueon betta food + Omega One freeze-dried shrimp
How often do you feed your betta fish? Aqueon betta food - 1 pinch daily, Omega One freeze-dried shrimp - 1 peeled and crushed shrimp biweekly

Maintenance
How often do you perform a water change? 50% biweekly
What percentage of the water do you change when you perform a water change? 50%
What type of additives do you add to the water when you perform a water change? water conditioner, stress coat plus, occasionally Aqueon pure live beneficial bacteria and enzyme balls

Water Parameters:
Have you tested your water? If so, what are the following parameters? yes:

Ammonia: 0.5 mg/L
Nitrite: 5 mg/L
Nitrate: 10 mg/L
pH: 6.4 mg/L
Hardness: 300 mg/L
Alkalinity:
Carbonate: 0 mg/L

Symptoms and Treatment
How has your betta fish's appearance changed? hole in the bottom of his body
How has your betta fish's behavior changed? Not much yet
When did you start noticing the symptoms? 11/29/21
Have you started treating your fish? Yes, erythromycin x4 days, then a 1 day break, and I've just started him on doxycycline
Does your fish have any history of being ill? no
How old is your fish (approximately)? About 1.5-2 years old

I do realize that this was rather abrupt but I was uncomfortable leaving him in his current tank overnight considering the water parameters, so I set him up in a hospital tank overnight that is 1 gal. Definitely still looking for advice!
