Big change in behavior

Hey everyone,

My betta Demetrius is usually a feisty one but lately, he's been hiding at the back of the tank. He used to swim up to me whenever I'd enter my room but now, he just largely ignores me. His colour hasn't changed, though he seems to be struggling a little bit with swimming, though sometimes, it looks like he just doesn't want to move from where he's at, so he swims all weird to get back in place without having to move too much... does that make sense? Anyway, I guess I'll just answer the questions.

Housing

What temperature is your tank? 26 C/78 F
Does your tank have a filter? Yes
Does your tank have an air stone or other type of aeration? No
Is your tank heated? Yes
What tank mates does your betta fish live with? None

Food
What type of food do you feed your betta fish? Pellets
How often do you feed your betta fish? Once a day

Maintenance
How often do you perform a water change? Once a week
What percentage of the water do you change when you perform a water change? 75% lately since he's been acting weird
What type of additives do you add to the water when you perform a water change? Water conditioner

Symptoms and Treatment
How has your betta fish's appearance changed? It hasn't

My fish has acted that way on a couple of occasions.
Once, when I had overfed him. I put him on a fast for one day and then cut his food in half for a few days after that.
The second time he was actually sulking because I had moved his castle into a different place. Once I put it back- he was happy.

I'm just worried because yesterday, he wasn't sinking that much but today, he's been sinking really fast :(
I also didn't feed him today -- trying to see if fasting him will do him any good.

It took my fish a month to start acting normal. Hopefully, someone more experienced will respond.
