Water Lettuce or Water Hyacinths ?

Quarantine, definitely yes. These will have been growing pond style and could potentially have hitchhikers that could wreck havoc on an aquarium. Water lettuce would be more suitable to the aquarium. Just be prepared for it to break down a bit. In my experience taking water lettuce from a pond where they grow 2-3 inches across and placing in an aquarium will cause them to break down into tiny plants more the size of a quarter.
The hyacinth is going to grow quite large at 12-16 inches out of the water.
Some other suitable floating plants for the aquarium to consider would be azola, salvinia, and red root floaters.
