Aristotle, my lovely Grizzle CT, has been acting really weird lately. I can't diagnose it.
Usually during the night, sometimes even during the day, he will freak RIGHT out. He won't jump at all, but he zips around his tank like an absolute maniac, and often runs into the walls so I end up hearing repeated BONNG sounds. I came home today and noticed he has a small hole in his dorsal, so the plant he has in there may be too sharp. He's resting at the bottom of his tank, but does come up for air easily and ate just as excitedly as he usually does. He's not sideways and doesn't have any spots and I see no trace of velvet, either. His scales aren't pinecone'd and he's not bloated.

Red Gills? Might be too much Ammonia. It is a 1 Gallon Tank. You are supposed to do a Water Change every other day. Not just Weekly. Can you post a Picture?
Symptoms: Fish Gasp for Air at Surface, ( Hard to tell because of Labyrinth )
Red or Purple Gills, ETC.
Do a test of how much Ammonia is in the Tank.
Even if you did a Water Change, did you Notice it Before or After the Change? Can you also post a Pic of his Hole?

one gallon is too small for him. he may be restless. 2.5 is a good size tank for him.
Also, try to feed him multiple types of food. pellets are recommended to prevent ickiness in the water. Dozen bloodworms are also a good choice. By stretching his variety of food, he won't be accustomed to one food and will be more healthy!
as people have said, check the ammonia level. That may be the reason

I'm not sure about the ammonia, I have 3 fish and the other two are completely fine, no red gills or complete spazztasticness.

He might be more sensitive to ammonia than your other fish.

Ideally 1 50% and 1 100% for a one gallon tank should be done weekly. This helps to reduce ammonia to safer amount (Safe is 0, but some can be tolerated). Some fish do just fine with only one change a week and others don't. This boy might be one that doesn't.

Just try changing his water twice a week for a few weeks and see if there's any improvement.

While you have him on the aquarium salt, keep him on it for 7-10 days (This helps to keep resistance issues of bacteria down since a full course of treatment will be followed) and do 100% daily changes. f he does have ammonia burns, then this will help to clear them up.
